What's the difference between impact-bonded and tri-ply cookware? Tri-ply, or "sandwich", refers to two manufacturing methods that transfer heat to cookware. Tri-ply cookware, also known as "sandwich", is composed of three layers. Typically, there's a layer made of stainless steel and an aluminum layer for heat conduction. Then, there's a layer made of stainless steel. A layer of heavy-gauge aluminum is placed on the bottom of impact-bonded cookware. Both methods can transfer heat efficiently but tri-ply construction works best because the aluminum core transfers heat throughout the vessel.
